Fried Pastries with Mastic from Chios Island


Ingredients:
  • 6.5 cups semolina
  • 8 eggs
  • Juice of 2-3 oranges 
  • a little salt
  • 1 tablespoon baking soda
  • 2.3 gr crushed mastic syrup
  • Unsalted pistachio
  • mastic liqueur



Put the semolina in a bowl and add the eggs , orange juice , salt, gum and soda . Knead well to make a firm dough . ( If the dough become too tight sprinkle a little water ) .Roll out the dough into sheets with a rolling pin and cut into small chunks, in different designs .
Fry in hot oil the chunks until browned. Put them in a plate over a napkin to remove excess oil. Sprinkle with the syrup after you have mixed it with mastic liqueur. Add the pistachios as a topping.
