Spinach Risotto



Ingredients :

  • 1/2 kg spinach
  • scallions
  • dill
  • salt
  • pepper
  • allspice
  • glutinous rice / carolina
  • olive oil




Begin by cleaning the spinach by removing the roots. Cut into large pieces (4-5 cm ) and wash well with fresh water. Wash and peel the scallions and cut into small slices . In a saucepan pour enough olive oil and when it has reached medium to high temprature add the onions and saute for a few minutes. After that add the spinach and sauté for a little bit. Add salt, pepper, allspice and a little water. Boil for 3 minutes and then add the chopped dill. Add the rice and cook over low heat by adding hot water if necessary. Cover the pan and cook until the rice reaches a juicy texture .
