Chickpeas Soup

Ingredients
  • 1/2 kg of chickpeas soaked in water and soda from the previous day 
  • 1 onion, finely chopped 
  • 1 teacup olive oil 
  • 200 gr  rice for soup 
  • salt 
  • freshly ground black pepper 
  • juice of half one lemon 





The night before wash the chickpeas with fresh water and put them in a bowl with water and soda to soak for at least 12 hours. After that rinse the chickpeas and put them in a pot with salted water and boil them. During boiling skim the foam they produce with the help of a spoon. Once the chickpeas are tender enough add the onion.  Continue to boil until you are left with a little broth. Add the rice and wait until it softens and the soup chelates. Add the olive oil, the lemon juice and the black pepper and stir. In a couple of minutes you are ready to serve. Season with some rosemary and enjoy an extra nutricius meal.
