Ingredients:
- 1/2 kg potatoes
- 100 gr feta cheese, grated
- 1 onion, finely chopped
- 2-3 tbsp parsley, chopped
- 1 tbsp dill, chopped
- 1 tbsp mint, chopped
- 3 tbsps olive oil
- 3 tbsps flour (keep the 1 tbsp aside for dusting)
- 1/2 teacup hardtack
- salt
- black pepper
Wash, peel and boil the potatoes. Then mash them in a food processor or with the help of a fork while they are still warm. Add all the ingredients in a bowl and knead until you have a mixture that can be conjured. Then shape potatoballs and roll them in a plate that you have dusted with 1 tbsp flour. Put them in the frying pan when the oil is very hot and fry them both sides for 2-3 minutes. Place them in absorbent paper and after that serve while they are still hot!
