Ingredients:
Pour in a pan some olive oil and add the onions, the peppers and tomatoes and fry them a little. Then add the bananas, curry, salt and mix slightly.
Whisk the eggs and pour the mixture into the pan. Fry the omelette until it reaches a golden brown colour.

- 2 cups diced tomatoes
- 2 green peppers sliced
- 4 tblspns olive oil
- 1 teaspoon grated curry
- salt
