Eggplant Salad

Ingredients:
  • 4 aubergines (cut into rings)
  • 2 cloves of garlic
  • 1 yoghurt
  • olive oil
  • lemon juice of one lemon
  • salt
  • pepper







Bake the eggplant on the grill until it is tender
In a food processor, add the olive oil and the garlic and mix them.
Make the eggplant purée in a food processor put them it a bowl and add the olive oil, the garlic, the lemon juice, salt and  the yogurt mix the ingredients until they turn into a soft sauce.
