Eyed Beans Salad


Ingredients:
  • 250 gr. eyed beans
  • chopped parsley 
  • 2-3 diced peppers 
  • 2-3 spring onions 
For the dressing:
  • 5 tbsp olive oil 
  • 2 tbsp balsamic vinegar 
  • 1 tbsp mustard 
  • 1 tbsp honey 
  • 1k.g curry 
  • salt
  • pepper 


Boil the beans. When they are cool pour the chopped ingredients in a bowl, add the beans, the dressing and mix them well. Put in the refrigerator for 2 hours before serving.
