Famous Spinach Pie


Ingredients:
  • 1 packet pastry
  • 1kg spinach 
  • 1 chopped onion
  • 4 chopped spring onions
  • 1/2 bunch of dill chopped
  • 400g grated feta cheese
  • 4 eggs
  • 3/4 cup of water olive oil 
  • salt 
  • pepper
  • 1 teaspoon fresh mint
  • 1 cup white sesame seeds 
  • 1 cup milk


Wash the spinach and remove any  rotten leaves. Boil in a pan for a few minutes and when it has wilted al little bit remove from water. Peel , wash and finely chop the onion , the spring onions ,  the dill and mint . In a saucepan add half of the oil and when it has warmed up add the onion and cook. As soon as it has wilted and add the fresh onions and continue cooking, add the spinach after you have drained most excess water on it by squeezing it with your hand and mix well and add salt , pepper , the mint , the dill , and the white sesame seeds. Stir to blend the ingredients and remove from heat. When the mixture is not too hot, add the grated feta cheese. Whisk 3 eggs, add them to the mixture , stir well and the filling is ready . Brush with olive oil the baking pan and place some pastry sheets across the entire surface of the pan. Spread the filling into the baking pan and cover with pastry sheets stretched. Put in the refrigerator for 10 minutes in. Cut into diamond shapes and whisk one egg with the milk and brush the top surface of the pie . Bake in preheated oven at 180 degrees,only the bottom part for about 30 minutes and then cook both top and bottom for another 15 minutes until the pie is golden brown .
