Sfougato from Crete Island

Ingredients:
  • 250 gr green onions
  • 1/2 teacup olive oil
  • 1/2 kg minced meat
  • 1 kg zucchini
  • salt
  • pepper
  • sliced dill
  • 10 eggs
  • hardtack

Peel and wash the onions, slice and sauté in a cooking pan with olive oil until wilted . Add the minced meat and sauté a few minutes.Add the chopped zucchini and let the ingredients simmer for half an hour. When the mixture is cool, add the eggs slightly whisked . Grease a rectangular baking dish with olive oil and sprinkle sufficient breadcrumbs . Add the meat mixture and sprinkle with breadcrumbs again. Bake in medium heat for about half an hour.
