Sofrito from Corfu Island

Ingredients:

  • 2 kg beef 
  • 10-12 garlic cloves sliced
  • 1 bunch parsley finely chopped
  • 1 cup white vinegar
  • 1 cup olive oil
  • 1 1/ 2 cup flour
  • salt
  • pepper
  • french fries for serving



Cut the meat into portions rinse and leave in a colander to drain. Put the flour in a bowl and pour the olive oil in a pan and heat it. Sprinkle the meat with salt and pepper and some flour . When the oil in the pan is hot frie a little bit meat pieces both sides. Then transfer them to a kettle, add the garlic, the parsley , the vinegar and 2 1/2 cups water, cover cook the meat for 1 hour. Uncover and cook until the sauce becomes slightly viscid. In the meantime, fry some potatoes. Serve the meat in the plates, accompany with french fries and sauce from the kettle as a topping.
