Spaghetti with Garlic and fresh Tomato from Santorini Island


Ingredients:
  • 1/2 pound spaghetti
  • 1 chopped fresh tomato
  • olive oil
  • 3 to 4 cloves of garlic
  • sinnamon
  •  pepper
  •  sugar 
  •  salt
  • two pieces of orange peel
  • rosemary


Boil the spaghetti and then drain , put a little olive oil and
Fry lightly the garlic in a shallow pan (with olive oil). Add the tomatoes , the orange peel , rosemary and
add a little sugar and salt . Stir frequently until the excess tomato juice evaporates. Pour cinnamon and pepper . Mix the sauce with the spagetti. Optionally, you can add some grated cheese as a toping.
