Stuffed goat from Samos island

Ingredients:
  • 1 goat 5.4 kg
For the filling
  • 2 cups of rice
  • 8 fresh chopped onions
  • 3/4 cup olive oil
  • chopped dill
  • chopped goat liver
  • 3 cups chopped tomatoes
  • pepper
  • salt

Saute the chopped onions . Then add the liver , dill , salt , pepper and three cups of chopped tomatoes . Pour the rice mixture and bring to a boil . The filling is ready . Meanwhile , wash the goat and salt and pepper the inside. Fill and sew it and add a cup of water and a little oil to cook the stuffing well .
