Stuffed Squid

Ingredients:
  • 5 large squid
  • 500 gr grated feta cheese
  • 1 chopped green pepper
  • 1 chopped red sweet pepper 
  • 2 cloves of garlic
  • 1 chopped small onion
  • a little chopped parsley
  • 8 tbsps olive oil
  • 4 tbsps ouzo
  • salt 
  • pepper

Wash the squid , clean the inside and remove the fins. Chop the fins.Pour half the olive oil in a pan and sauté the chopped fins with the onion the garlic and peppers . Add the ouzo, the parsley , salt and pepper and cook for 3 more minutes stirring the ingredients. By the time the mixture is not very hot add the feta cheese and stir again . Fill the squid with the mixture and close with toothpicks. Sprinkle with some olive oil and wrap squid in foil. Bake in the oven at 180 degrees for about 30 minutes.
