Stuffed Vine Leaves


Ingredients:

  • 1 teacup rice
  • 400 gr . fresh soft vine leaves
  • 1 bunch chopped dill
  • 1 ½ tsp chopped mint
  • 1 bunch chopped spring onions
  • 1 kg grated onions
  • juice of two lemons
  • 1 ½ teacup olive oil
  • 50 gr pinecone
  • 1 tspn salt
  • 1/2 tspn black pepper
In a deep saucepan scald the vine leaves into hot water, remove them from the pan and drain them.
In shallow pan add the olive oil the onions and stir in low heat. Before they reach a golden brown color add the rice, the pine nuts, the lemon juice, the dill, the mint , salt and pepper . Stir again and remove the pan with the filling from the heat. Put in in the center of every vine a full teaspoon of the filling and wrap it tightly . Spread some vine leaves in the bottom of a cooking pot , place above them the stuffed vine leaves in a circilar way and in layers, and cover them at the top with vine leaves. Pour fresh water until the food is covered, place the pan top and cook in low heat for about 1 hour. Enjoy them hot or cold!
