Beet Salad


Ingredients:

  • 2 kg beets
  • 1 kg potatoes
  • 1 chopped onion
  • 1 bunch of parsley chopped
  • 1 teacup olive oil
  • 1/2 teacup vinegar
  • 3 cloves of garlic
  • 2 tspns salt



Using a knife divide the beets from the leaves and stalks after washing them.Peel the beets and boil in a cooking pan until tender . After half an hour and add the stalks with the leaves. In another pan boil the potatoes as well after you have washed and peel them. Cut the boiled beets and potatoes in slices and place them in a deep plate decorated with the stalks and leaves. Chop the garlic, mix with the olive oil, the vinegar and the salt and pour over your salad. Add the chopped parsley and onion as a topping and you are ready to serve
