Ingredients:
- 1 kg pork cut into cubes
- 1 kg leeks cut into chunks
- 500 gr carrots cut into thin slices
- 60 gr olive oil
- salt
- black pepper
- red pepper
- oregano
- 1 ripe tomato thinly sliced
Boil the leeks until the water boils two oin boiling water and let them take two or three boils .
Boil the carrots and then remove excess water from carrots and leeks . Sprinkle the pork cubes with salt, black and red pepper (after you have washed the meat with plenty of fresh water).
Pour olive oil in a pan and fry the meat over low heat and until it reaches a golden brown color.
Add the leeks , the carrots and the tomatoes, stir and continue cooking. As soon as most liquids have evaporated sprinkle with red and black pepper and oregano.
