Strawberry Jam


Ingredients :
  • 2 kg strawberries
  • 750 gr sugar
  • juice of one lemon

Wash the strawberries in a colander. Remove the stalks and cut them into pieces. In a wide cooking pot, place one layer of stawberries, cover it with one layer of sugar and continue likewise until you add all the ingredients. Let the sugar rest on the strawberries for a little and then cook in high heat. Once the the mixture starts boiling lower the heat so that it does not boil and remove the generated foam with the help o a spoon ( caution : the spoon shall not be wet). Pour the juice of one lemon and lower the heat to 1.5 . Stir once in a while
to avoid mixture sticking. Allow to simmer for about half an hour and test whether the jam has thickened. 45 minutes cooking sthould be enough for the mixture to become viscid. The mixture will produce 4 medium sized jars of jam. Fil the hot jam into clean hot jars , close them tightly and let them cool, placed over a towel so that they do not break.
