Lentils Salad

Ingredients:

  • 250 gr. lentils
  • 1 tomato peeled and diced
  • 1 onion, chopped
  • 50g. brown olives, pitted
  • 50 gr gherkin, chopped
  • 1 tbsp capers
  • 1 sweet red pepper, finely chopped
  • 1 green pepper, finely chopped

  • some parsley, finely chopped
  • salt
  • 2 tbsps olive oil
  • 1 tbsp vinegar


Wash and boil the lentils in a little salted water for 10 minutes. Rinse them in a colander and put them in a bowl. Add the onion, the peppers, the tomato, the olives, the gherkin, the capers, the olive oil, the vinegar and the salt and stir with a spoon. Add the parsley as a topping and you are ready to serve.
