Beetgreens Salad

Ingredients:

  • 2 bunches beetgreens, washed with fresh water and stems removed
  • 1 clove garlic, minced
  • 3/4 teacup olive oil
  • 1/4 teacup lemon juice
  • salt




In a large pot, put the beetgreens and add water until they are completely covered. Let them boil. for 2 to 5 minutes (until they are tender) and drain them in a colander. Chop and place them in a salad bowl. Mix the olive oil, the lemon juice, the garlic and the salt in a teacup with the help of a spoon and season the beetgreens. Enjoy your extra nutricius salad and don't forget to dip some bread in the sauce when the beetgreens are gone and taste it too!
