- 1/2 kg fava
- 1 onion, chopped
- some parsley, finelly chopped
- 1 teacup olive oil
- juice of 1 lemon
- salt
- pepper
Fava is one of the most delicious legumes. It can not only be served as an appetizer but as a main dish as well. Let fava rest in a bowl filled with water for two hours. In a pot add water, the fava and half of the chopped onion and let your ingredients boil skimming from time to time until the mixture becomes a little viscid. Put all the food in a food processor in order to make a nice pulp. Season with salt and pepper and simmer a little longer. Serve in a deep bowl and add the rest of the chopped onion, the parsley, the olive oil and the lemon juice and you are ready to enjoy! .
