- 1 pound of anchovies
- salt
- flour
- olive oil for frying
- lemon juice of one lemon
Clean the anchovies, cutting head and starting offal. Wash them well with fresh water, drain and season them with salt. Put them in a plate with flower and roll them until the surfaces of the fish are covered. In a frying pan, add the olive oil and when it is hot enough add the fish. Fry them both sides until they are lightly browned. Remove them from the frying pan and place them in absorbent paper. When excess oil has been absorbed serve them in a plate and sprinkle with lemon juice.
