Okra In The Oven With Tomato Sauce


Ingredients:

  • 1 kg okra 
  • 1/2 kg tomatoes, grated 
  • 2 potatoes, quartered 
  • 1 onion, chopped 
  • 1/2 bunch parsley, finely chopped  
  • 1 teacup olive oil 
  • 100 ml vinegar 
  • salt 
  • pepper 



Wash the okra, drain and remove the stem. In a pot pour the vinegar and a little water, add salt and the okra, leave them for about 15 minutes. Rinse the okra and spread them in pan. Add the potatoes, the tomatoes, the onion, the chopped parsley, the olive oil and water so as to cover the okra. Sprinkle with salt and pepper and bake in the oven at 180-200 ° Celsius for about 40 minutes, until most liquids evaporate. If needed reduce the temrature to 160 ° C and cook a bit more. Enjoy your meal warm. Can be consumed as an nutricius main meal accompanied by feta cheese or served with chicken.
