- 4-5 medium sized zucchini
- some flour
- Olive oil for frying
Wash the zucchini with fresh water, peel and cut into slices. Put the zucchini slices in a colander, add salt and leave for half an hour. Roll them in a plate with flour so as to cover them all over, put them in a plate and refrigerate them for 2-3 hours. When the flour has turned into dought they are ready for frying. Fry in plenty of olive oil until they are browned. Serve immediately and accompany them with yoghurt (mixed with some sliced fresh mint, olive oil, salt and pepper), mayonnaise or tzatziki or any garlic based sauce.
