Rinse well all the vegetables with fresh water. Slice the eggplants an put them in a bowl filled with water for a couple of hours. In the meantime, prick the peppers with a knife, place them in a pan, brush them both sides with olive oil and bake them in the oven at 200 Celsious degrees.When some black burns appear on their surface remove from the oven, put them in a glass bowl with a lid and let them cool. After a while peel them and keep the broth created inside the bowl for the vinaigrette. Peel the onions, slice all your vegetables and place them in a ceramic pot with a lid. Cover and bake in the oven until wilted. In a bowl mix well your vinaigrette ingredients. When your vegetables are ready remove from the oven and season the vinaigrette, basil leaves and some freshly ground pepper. You are ready to serve!
