Capersalad


Ingredients:


  • 60 gr capers (leave in a bowl with fresh water for 1 hour before adding to the salad)
  • 3 boiled potatoes, peeled and cut into cubes
  • 1 tomato, sliced
  • 3-4 sundried tomatoes cut into chunks
  • 1 onion, cut into rings
  • 3 large cans tuna in water
  • ½ cup black olives, pitted
  • 1 bunch arugula




For the sauce:

  • 5-6 tablespoons olive oil
  • salt
  • pepper
  • 1 tablespoon red wine vinegar

Boil the potatoes in salted water and peel them. In a bowl, mix the olive oil, vinegar, salt and pepper. In a salad bowl or a large bowl add and mix the arugula, the capers, the potatoes, the sundried tomatoes, the tomato, the onions, the olives and the tuna. In a bowl mix the olive oil with the vinegar the salt and pepper and drizzle your salad with the dressing. You are ready to serve!
